Each ham undergoes a minimum of 36 months of careful aging in La Alberca, a nature reserve designated as World Heritage. Organoleptic properties

  • Colour: Red-pink with veins of white-nacreous fat infiltration in the tissue.
  • Appearance: Uniform, solid, typical. Slightly flattened shape.
  • Appearance when cut: Uniform, veined, characteristic.
  • Texture: Homogeneous, slightly fibrous, without pastiness or softening. When pressed with the thumb, the fat layer sinks easily.
  • Smell and taste: Pleasant, characteristic.

sugar, antioxidants E-331iii and E-316 (4.00%) and preservative E-252
(10.00%).
